Vegan Crab Legs (Chinese Edamame)

Do you like Edamame at the Japanese restaurants? They are tasteful and healthy. Chinese people in my region (lands immediately to the south of the lower reaches of the Yangtze River, such as Shanghai, Suzhou, Wuxi, Hangzhou) love eating these soybeans in the pod. We call the dish “Vegan Crab Leg” because the dish is vegan and the pods look like crab legs.

Vegan Crab Legs are extremely simple to make. Boil the soybean pods in hot water with salt, and then soak the cooked soybean pods in Chinese pickle source overnight in the fridge. Chinese people love eating them as snacks when chatting or drinking alcohol.
