Taiwanese Beef Noodle Soup is made of stewed beef, beef broth, vegetables, and Chinese noodles. The key is to use beef with tendon instead of lean meat. You can use shank or heel meat. Besides the standard spice mix for all kinds of meat, some complicated recipes use soybean paste (the sweet paste you use for Peking duck) and fermented tofu. I only used light source (Sheng Chou), soy source (Jiang You), and dark soy source (Lao Chou)
